Asian salmon hot-pot stolen from Wagamama

I am freshly returned from a trip skiing in France. It was lovely, thank you for asking.  As I sit here typing through the bleary eyes of what was a sleep-lite, booze-heavy trip, thoughts turn to the Savoyarde cuisine that still sits heavy in my belly. Oh dear christ the amount of cheese. And potato. And cheese. And potato. And cheese. It’s time for something light and healthy.

Luckily, the Wagama cookbook has just the thing: ‘Asian hot-pot’. Salmon, cooked in a big pot with leek, carrot, celery and what sounds like an improbable amount of soy sauce but that I can assure you works wonderfully, giving the dish a really perfect seasoning. This is one of those dishes I cook very regularly when i’m in need of something nourishing and healthy, such as after a week spent stuffing tartiflette down my gob in-between Jaegerbombs.

Koba

Desperate for a drink but knowing that on an empty stomach it’d end in tears, two former housemates and I bundled in to Koba one cold damp January evening to refuel ahead of a few drinks. Koba is a restaurant offering diners ‘Korean Barbeque’ cuisine. Having never eaten Korean food before I have few reference points. Still, there was no dog discernible in what I ate which means it must’ve been ok.

Prawn noodle salad

Since it’s the new year and everyone is trying to be healthy here’s a recipe I stumbled in to for an Asian-ish prawn noodle salad. It really was a matter of what I had in my cupboard, but it’s worked out pretty good. Plus, it’s like WELL healthy. I think. Maybe. It tastes healthy, OK.

Smoked Haddock Chowder

I’m a big fan of smoked haddock chowder. It’s absolutely perfect for this time of year: warm, nourishing, delicious and – unlike soup – a proper meal. Also, given people are probably fed up of both turkey and over-indulgence by now, this offers some light relief from the Christmas stodge.

Chilli con carne done right

I’m back and despite abundant evidence to the contrary, you all fucking missed me. Really this is Donkey’s fault but that’s her story and in time I’ll let her share it. For now though, all you need to know is that as I was cooking Chilli at 11pm on a Tuesday night whilst drinking vodka and decided fuckit, ‘Eat with Matt’ shall return.
